Learn to cook fresh Tomato Salad with Basil and Olive OilIn fact, the Tomato, Olive Oil and Basil Salad isn't cooked at all in the conventional sense: raw tomatoes are left to 'cook' in lemon juice and sea salt for a few minutes before being sprinkled with fresh basil leaves and served as a beautifully light starter.

Learn to cook fish to perfection...

Learn to cook Chargrilled Tuna with Chilli Oil DressingFresh raw tuna is marinated in lemon juice, fresh thyme and olive oil, then given a fierce brief searing in a cast iron ridged griddle pan.

This lends some great flavour to the outside, leaving the inside just cooked - exactly as tuna should be.  It's then served on a bed of rocket with oven-dried cherry tomatoes and drizzled with a mild chili oil dressing.

Unusual favour combinations...

Learn to cook Glazed Lemon TartGlazed lemon tart with basil ice cream.  Well, where to begin? Learn to cook a lemon-infused Crème Anglaise over a bain marie; classic blind-baked sweet pastry; glazing the top of the tart with the flame of a blowtorch.

The ice cream is special - learn to cook a classic ice cream base of Crème Anglaise, but this time infused with handfuls of fresh basil leaves. There, guaranteed to send you home from your cooking holiday feeling proud of your new-found cooking skills.

RETURN AIRPORT/RAIL TRANSFERS:
We pick you up in our own seven-seater vehicle each Monday afternoon and drop you off the following Saturday morning. Destinations include Limoges airport, and Brive la Gaillarde and Sarlat train stations (see details of our airport and rail transfers).

Transfers are conducted on a first come first served basis. Detailed dates and times are to be agreed with us prior to booking your travel arrangements, so please do not book tickets until you've agreed them with us.

ACCOMMODATION:
Accommodation is normally on-site, but, under exceptional circumstances, 1 & 2 day guests may be accommodated at a very pleasant nearby B&B 5km away.

NUMBERS:
The optimum number of participants on a course is six, but sometimes we have fewer than that and have occasionally taken up to ten.

ITINERARY:
