For example: recently, we asked for one of their most exclusive and expensive hams, the fabled Iberico Bellota Reserva Paleta (acorn-fed foreleg aged for 36 months).
I was SO looking forward to this delivery I thought I'd burst with anticipation and the wait, but you could have knocked me down with a feather when it arrived just five days later!
An Aladdin's cave of goodies...
Securely packaged, it was delivered during a recent cooking week, so we descended on the box with glee. Once opened we found the following:
- A muslin-wrapped prime Iberico Bellota Reserva Paleta ham
- Long thin flexible carving knife
- Instructions for carving
- Wooden carving stand
- Parchment-style certificate personally signed by the British owners, Iain MacDonald and Gayle Hartley
But also, emanating from within, there was this deep dark rich aroma (which must have driven our local postie mad with curiosity!). We quickly assembled the wooden stand (essential for carving) and pinioned the heavy leg ready for slicing.
The scariest cut of all...
Knowing that this was a moment to savour, my hand literally trembled on this, the most expensive of their Serrano and Iberico hams as I cut that first slice! But, armed with Iain's excellent instructions - and super-sharp ham knife - I couldn't go wrong as I sliced off wafer thin sheets of mahogany coloured meat.
And then it was our guest's turn: one by one they pared off lacey swatches of ham so aromatic you could taste it even before putting it in your mouth!

So, what did it taste like..?
Well, devine, of course! Deep, rich and heavily scented with nutty undertones, it was the most tender, delicate and distinctive hams I'd ever eaten.
And that was also the view of our lucky guests, who unanimously declared Serrano and Iberico ham to be food of the Gods!
Move aside Parma, Iberico is taking over..!
Served in the best tapas bars on the Iberian peninsula, and perfect on it's own with a ripe Charentais melon, succulent peaches or a good piece of real buffalo mozzarella, this ham is unbelievably good!
